Inactivity, understood as a mental condition and not just as a physical action, does not belong to Stefano Canosci’s nature. “To elaborate” is a verb that suits him; he likes the idea of transforming and at the same time maintaining the identity, update and never deny. Hence the goal of making his restaurant Chicco the temple of pizza, studying day and night to obtain the perfect dough, always opening up to a world that’s evolving. Pizza Revolution is the book of his studies, the story of his professional experience and the collection of the recipes that best represent him.
Stefano Canosci has had so many experiences, slightly different from his colleagues, among Michel starred restaurants, tradition and experiments in foreign countries. He started very young in the staff of Michelin starred chef Antonello Colonna, his first mentor. There he started getting curious about home made bread. After years of studying, he opened his own place Chicco, an informal bistrot, where pizza starts to be the centre of his cooking.
